I like the Icelandic-style jumper. I have a basic pattern that I follow, knitting it on circular needles from neckline to bottom, in medium thick alpaca wool. It makes the jumper quick to make, relative to its size, and it is warm and soft and fuzzy and perfect to wear when you want to be comfortable on chilly days. It is also easy to customize. For every jumper I knit, I make a new repeating pattern for the yoke and adjust the color scheme. The thickness of the yarn (and therefore also the thicker needles) means that I can knit for longer without my fingers cramping, which is great for dark winter Sundays when all I want to do is binge TV series and drink tea.
